Brewing process

Every bottle of Mazurski Beer is the result of more than a dozen steps that combine traditional, time-tested brewing methods with the modern facilities of our brewery in Ełk. Discover how four simple ingredients — malt, hops, yeast and water — become the beer loved across Mazury and beyond.

Four ingredients, one character

We don’t use any artificial additives or preservatives. Everything that goes into our vats is 100% natural.

Malt

Carefully selected grains, malted according to proven recipes — it's what gives beer its sweetness, colour and full body.

Hops

Fine hops are responsible for beer's characteristic bitterness and aroma — from delicately floral to intensely fruity, depending on the style.

Yeast

It converts sugars into alcohol during fermentation, shaping the character of the beer — from light lagers to strongly aromatic ales.

Water

Crystal-clear water is the foundation of every brew — its quality has a direct impact on the final taste of the beer.

How Mazurski Beer is made — step by step

At Mazurski Browar, the brewing process is a carefully refined cycle. Every stage matters for the final taste, aroma and quality of the beer that ends up in your glass.

Raw materials delivery

It all starts with choosing the best ingredients from trusted suppliers — malt, hops, yeast and water — delivered to our brewery in Ełk.

Malt milling

Malt grains are precisely crushed in the mill, making it easier to release their valuable properties during mashing.

Mashing

Milled malt is combined with water in the mash tun. This is a key stage, during which enzymes convert starch into fermentable sugars — it determines the sweetness and body of the future beer.

Lautering and wort sparging

In the lauter tun, the liquid, sweet wort is separated from the spent grain.

Wort boiling with hops

The wort moves to the brewhouse, where it's boiled with hops. This is where the beer gains its characteristic bitterness and aroma.

Wort clarification and cooling

The boiled wort is spun in the whirlpool to remove leftover hops and protein sediment, then rapidly cooled through a heat exchanger down to the temperature required by the yeast — a condition for healthy, clean fermentation.

Fermentation and conditioning

The cooled wort goes into fermentation tanks, where yeast converts sugars into alcohol. Afterwards, the beer matures in conditioning tanks, developing its full flavour, clarity and style-specific aroma profile.

Packaging

The finished beer is filled into bottles, kegs and party kegs — and from there, straight into your hands.

Craftsmanship you can taste in every sip

Natural ingredients

Real hops, crystal-clear water, selected grains, malt and yeast. No preservatives, no chemicals — at any stage of the process.

Unfiltered and unpasteurised

Beers from our core range are available pasteurised (0.5 l bottle) and unpasteurised (10–30 l keg, 5 l party keg, 0.5 l bottle), preserving their full taste and aroma. All other beers are pasteurised.

The NITRO effect

MAZURSKIE beers are nitrogen-infused for a creamy mouthfeel and a fine, tight foam — with no excess CO2, but with exceptional depth of flavour.

We love playing with classic beer styles from different countries and eras, adding contemporary, Mazurian touches. See which of our beers represents each style.

American amber ale

An amber beer from the Pacific Northwest, with a fuller, darker character and balanced bitterness — for us, that’s MAZURSKIE Ale Czerwony, a multiple award-winner at Kraft Roku and the European Beer Challenge.

Bohemian Pilsner

A classic dating back to 1842 and brewer Josef Groll. A pale beer with pronounced bitterness — our take is MAZURSKIE Pils AKWEN, gold medallist at Kraft Roku 2021.

Munich Dunkel

A dark lager from Bavaria with a pronounced malty taste and mild bitterness, brewed in the spirit of the Reinheitsgebot — meet MAZURSKIE Lager Ciemny, one of our most recognisable and award-winning beers.

Stout

A dark top-fermented beer brewed with a blend of malts, including roasted ones — full-bodied and deep black in colour. Our limited-edition take is MAZURSKIE Imperial Oatmeal Stout BBA, aged for 9 months in bourbon barrels.

Pale ale

A style born in England, with one of the broadest definitions in the brewing world. Its hoppier, more intense descendant is MAZURSKIE India Pale Ale (IPA), silver medallist at Kraft Roku 2018.

Hefeweizen

A traditional Bavarian wheat beer — refreshing, with characteristic banana and clove notes from the yeast. For us, that’s MAZURSKIE Pszeniczne, brewed exactly in this classic style.
