Unpasteurized beers are becoming increasingly popular among beer connoisseurs, thanks to their unique aroma, fresh and full-bodied taste, and nutritional value.
Producing high-quality unpasteurized beer requires appropriate storage and transport conditions, as well as strict adherence to rigorous hygiene standards. It is precisely thanks to these standards that such beers stand out for their natural taste, lightness, freshness, and noticeable grain, hop, and fruit notes.
Unpasteurized and unfiltered beer, characteristic of craft breweries, contains natural yeast sediment. It is rich in valuable nutrients such as proteins, minerals, and vitamins, particularly B vitamins, which have a positive effect on health.
By drinking good unpasteurized beer, we provide the body with potassium, magnesium, calcium, and phosphorus. Antioxidants, in turn, contribute to the formation of blood vessels, reduce the risk of heart attacks, and help remove toxic substances, including free radicals.
Unpasteurized beers may also have certain disadvantages. Due to the absence of pasteurization, they may contain higher levels of bacteria and yeast, which can affect the beer’s shelf life and quality. Such a beverage may also not be the best choice for people with sensitive digestive systems.
Pasteurization is a process that neutralizes microbiological contaminants by heating the product to a temperature of between 60°C and 85°C and then rapidly cooling it. A sufficiently high temperature destroys microorganisms that may be harmful to health, allowing products to remain suitable for consumption for longer.
Interestingly, the taste of unpasteurized beer may vary depending on when the bottle is opened. Pasteurized beers, which have a stable aroma, do not undergo this kind of flavour evolution.
Due to their unique production process, which does not involve pasteurization or filtration, unpasteurized beers should be stored under appropriate conditions.
To preserve their freshness and taste for as long as possible, they should be kept at a low temperature and protected from both sunlight and artificial light. However, it is important to remember that, unlike pasteurized beers, they have a significantly shorter shelf life. Therefore, they should be consumed as soon as possible — the fresher the beer, the better.
